The global camel milk business is worth > 11 billion US dollars annually. About 70% of camel milk is consumed by camel owners and never reaches the market but some companies (farmers, cooperatives, and corporate) process and market the camel milk. Because of the availability of camel milk in the market, the consumption of camel milk is increasing and there is an ever-increasing demand for it, mainly because of health reasons and sustainability of the farming system.

We celebrate world camel day each year on 22nd June to highlight the importance of incredible camel and aware/educate the masses about the role of the camel in food security, climate change adaptation, culture and ecosystem management. Each year, this day is being celebrated in many parts of the world and the interest is increasing with the passing of each camel day.

I explore the desert once a week since many years. I collect some rubbish from the desert each week and throw it in the nearby facility of waste bins. Roughly, I collect and properly dispose some 500 kg rubbish each year. We must show sympathy and sensitivity to the nature at large and the poor camels specifically. Recently, yogurt could not be made from CaM unless the dromedary milk samples were fortified with combinations of cow??"s milk constituents (micellar casein, whey protein, and sodium caseinate) in the presence of microbial transglutaminase. Others added commercial chymosin along with gelatin, starch, and skim milk powder. However, the final product deviated from standards of identity for yogurt traditionally made by acidification (no cheese coagulant) by selected lactic acid bacterial starters.  Instead, the resulted CaM fermented product could be best described as a yogurt-like one.

Lycium shawii is highly adapted to desert ecosystems. The thin-leaved, rigid bush grows up to 3 meters (9.8 feet) high, with a lot of branches and alternating spines that vary in size, and grow along the branches and on their tips. The leaves narrow towards their base. It produces small whitish-pink or purple flowers from Sep to Apr. The fruit is small red pea-sized (seedy berries), edible, and used as herbal medicine as well. In the mysterious camels, the temperature of the exhaled air is dropped and the heat energy and water are reabsorbed in the nose. While exhaling the camels dehumidify the air with the help of specialized hair in the nose as the nasal opening is very narrow and hairy, remains wet all the time. This way the airy, narrow and wet nasal opening reabsorb the moisture and energy both and return to the body.
